Ingredients

  • 1 envelope Active Dry Yeast
  • 1/4 cup very warm Water
  • 1/3 cup Sugar
  • 1/4 cup Butter
  • 1 teaspoon Salt
  • 1 cup scalding hot Milk
  • 1 Egg lightly beaten
  • 4 1/2 cups sifted All-Purpose Flour
  • 2 tablespoons melted Butter for brushing the rolls.

Instructions

  • Sprinkle the yeast over very warm water in a large bowl (Very warm water should feel comfortably warm when dropped on wrist.)

  • Stir until yeast dissolves.

  • Add sugar, the 1/4 cup butter or margarine and salt to hot milk and stir until the sugar dissolves and butter or margarine is melted.

  • Cool mixture to 105 to 115°F.

  • Add milk mixture to the yeast, then beat in egg.

  • Beat in 4 cups of the flour, 1 cup at a time, to form a soft dough.

  • Use some of the remaining 1/2 cup of the flour to dust a pastry cloth.

  • Knead the dough lightly for 5 minutes, working in the remaining flour (use it for flouring the pastry cloth and your hands).

  • Place dough in a warm buttered bowl. Turn greased side up.

  • Cover and let rise in a warm place until doubled in bulk, about 1 1/4 to 1 1/2 hours. Punch dough down and knead 4 to 5 minutes on a lightly floured pastry cloth.

  • Dough will be sticky, but use as little flour as possible for flouring your hands and the pastry cloth, otherwise the rolls will not be as feathery light as they should be.

  • Pinch off small chunks of dough and shape into round rolls about 1 1/2 to 1 3/4 inches in diameter.

  • Place in neat rows, not quite touching, in a well-buttered 13 x 9 x 2-inch pan.

  • Cover rolls and let rise in a warm place until doubled in bulk, 30 to 40 minutes.

  • Brush tops of rolls with melted butter or margarine, then bake in a 375°F oven for 18 to 20 minutes or until nicely browned.

  • Serve warm with plenty of butter.

This recipe yields about 2 dozen rolls.

FAQs

Should I brush yeast rolls before baking? ›

This is most commonly done on lean dough rolls. Egg wash: Either egg yolk (to aid in browning), egg white (to add shine), or whole egg wash (for both) can be brushed onto the surface of proofed rolls before baking. I mix the egg with a tablespoon or so of water to help it achieve a brushable consistency.

Why did my yeast rolls turn out tough? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing. Protein gives bread structure in the form of gluten—the more you mix and move the dough, the more gluten you get.

What is the difference between bread and rolls? ›

Is a roll considered bread? Because not all bread is made in the shape of a roll, rolls and bread are not exactly the same. Bread rolls are a type of bread that are typically small and round and are frequently served as an appetizer or as a side dish to a meal.

Can you leave yeast rolls out overnight to rise? ›

Yes! If a recipe calls for proofing bread dough overnight in the refrigerator, it can be proofed on the counter at a warmer temperature for a shorter period. Rather than placing the dough in the refrigerator overnight, leave it covered on the counter for 1 to 4 hours until it's ready to bake.

What does Overproofed yeast look like? ›

Overproofed is when the dough has rested too long and the yeast has continued making carbon dioxide while the strength of the dough (gluten bonds) have begun to wear out. The dough will look very puffy, but when you touch it or move it you may notice it deflate or sag.

Can you over knead yeast rolls? ›

It's vital to stop mixing at the first signs of over-kneading, as a fully over-kneaded dough cannot be fixed. Over-kneaded dough will also tear more quickly, as the gluten strands in the dough have become so tight they easily break under pressure.

Can you use too much yeast in rolls? ›

Too much yeast could cause the dough to go flat by releasing gas before the flour is ready to expand. If you let the dough rise too long, it will start having a yeast or beer smell and taste and ultimately deflate or rise poorly in the oven and have a light crust.

What do northerners call bread rolls? ›

"[It is] the most chosen variant and the one with the widest spread across the country, predominating in the South and in Scotland." 'Bun' was the favourite of the North East, while 'bap' dominated in north Wales.

What is the end of a bread roll called? ›

But what's it called? The proper term is “heel,” according to the Cambridge Dictionary. Some may call it just “the end piece” or “the butt” when going with true informality. Some Redditors even refer to them as the “crusts,” a double whammy for both the outside of each slice and the end of the loaf itself.

What are slang words for bread roll? ›

A cob, a roll, a bun, a barm, a batch, a bap – it's just flour, yeast, salt, and water, but the country seems to be overflowing with different names for the humble morsel.

Is butter or shortening better for yeast rolls? ›

Shortening traps more air bubbles and has a higher melting point than butter, so recipes using shortening tend to produce baked goods with more lift and that hold their shape during baking. Interior texture will also be softer and lighter.

Why do you put eggs in yeast rolls? ›

besides the nutritional benefits there are a few other good reasons to use egg in breadmaking. It makes the bread lighter and fluffier. The reason for that is the fat in the yolk that inhibits gluten formation just as any other fat would. This results in a looser dough that can expand and puff up more.

How long can yeast rolls sit before baking? ›

These unbaked dinner rolls can be refrigerated for up to 18 hours before baking. Remove from the refrigerator an hour and a half before serving. Let them stand for about 1 hour 15 minutes before baking.

Should you brush bread before baking? ›

Butter or Olive Oil Brush: Brush softened butter or olive oil atop the loaf before baking to add flavor and color. Milk Bath: Brushing a loaf with milk before baking gives the baked bread a tender, golden crust. For a sweet bread recipe, sprinkle with sugar if desired.

Why are some yeast doughs brushed with a wash before baking? ›

In baking, many recipes call for an egg wash to be brushed on the baked goods before it goes into the oven. The purpose of this is to give the final product a golden brown color that is slightly shiny. Egg washes can make the final product look more professional, a bit crispier, or act as a binder."

How do you keep yeast rolls from drying out? ›

Refrigeration pulls moisture from bread, which speeds up the staling process and causes the bread to dry out. For longer storage, freeze the bread. Most yeast breads and rolls freeze well. To freeze, wrap securely in aluminum foil, freezer wrap or place in freezer bags.

Why brush rolls with butter? ›

Additionally, the rolls are baked close together which lowers the amount of browned “crust” on the rolls, which yields an overall softer texture – pull apart pillow heaven! Lastly, the tops of the rolls get brushed with butter which helps seal the rolls and keep them nice and soft.
